So here we go, Chicken Pot Pie, Lorieloo style. I got this recipe from my sister-in-law Colleen.
But before we start I must say that I took a lot of pictures and will try to be detailed, even though this is a super simple recipe. And if you're a veggie-saurous than you could skip the chicken and just add more veggies. And If you haven't already, discover the Pioneer Woman. Her cooking is so delicious and while it might not always seem to be the easiest thing to cook at first, her step by step pictures (and hilarious commentary) make everything she cooks uber appealing and enticing to try.
So without further ado.....
The ingredients
I will say that all too often I don't actually boil my own chicken. I'll buy the whole roasted chickens from the grocery store and just pick them apart. Also, I didn't have frozen mixed veggies, so I just mixed my frozen veggies!

The actual recipe
But if you're boiling chicken this is how I do it,
and I'm sure there are a bunch of tricks for boiling chicken,
this is just mine.
I start by either using chicken broth or in this case,
chicken bouillon cubes.
Then I add the chicken.
And I let that cook for awhile. In the mean time I prep my veggies.
I'm a huge fan of potatoes in everything,
so in addition to my two cups of frozen veggies,
I add some small diced potatoes.
Seriously Henry, mommy is trying to cook.....

I use the easy, roll out crust, but I'm sure this would be
even more delicious if you wanted to make your own crust.
But I did say this recipe was easy, so roll it out dough it is.
I like to buy them when they're on sale and stick them in my freezer.
This meal really can be a "freezer" meal because you most likely
will have most of the contents in your freezer.
Just lay it flat and push the crust into the pie plate so that
completely covers the dish.
I think I smell the chicken.
When you drain off the liquid it should look something like this.
I always cut into the middle of the thickest piece to make sure it's
all white with no more pink spots. Pink chicken=bad!
Then I dice it into small bites, but careful-it's hot!
(Do you see why this is so much easier when you just buy a pull a part chicken?)
The recipe calls for 1 lb. of cooked chicken.
I cooked three chicken breasts and only ended up using two.
I probably should have used the third.
Then into a skillet goes a the butter. 1/3 cup of butter.
And I do mean butter.
Everything is better with butter.
Then add the flour, 1/3 cup.
Then add the milk, 2/3 cup.
Then add 1 1/2 cups chicken broth.
Stir well.
Keep stirring until thick and bubbly.
Then add the veggies and meat...
Stir until everything is well coated.

Cover with the second crust and sort of mush the crust all the way around the edge. You can sort of fold it over, or get fancy and press down with a fork.
Just cut off any excess so as not to burn it.
Me, I'm a simple gal, so the folding-smushing method is the way to go.
Then cover with foil and stick in the oven for 30-40 minutes. At about 25-30 minutes, check to see how it's coming and
pull of the foil to let the crust brown up a bit.
When it's done, it should look like this.Yummy and golden brown.
If you have any spots off crust on top that still look a bit uncooked, cook it longer.=)
The flakier the better.

So there you have it, my favorite chicken pot pie recipe. Actually it's my only pot pie recipe. But still, it's delicious and I even like it reheated the next day (and the next day too!).
Hope you enjoy and I hope you enjoyed your week off Talia!

mmmm, yum, my mouth is watering. And yes, I am very glad for my week off (even though I've been bad about it lately, anyways... :))
you are a dear, sweet Lorie-- and a great cook too!!
Oh my gosh...that looks sooo good! Of course I'm even MORE starving since I forgot breakfast today! Thank you for all the pics :)
It makes me gag : ( No offense to your recipe, my husband would love it, and I should make it for him some time. Thank you for the recipe that so many find delicious, but I just can't stomach it.
posting 3 days in a row? i'm impressed!
adorable and funny commentary. almost makes me want to cook:)
nah, i'll leave that to wife#3.
kidding people.
my reciple is similar, but i was unaware of the secret tip on boiling chicken in broth. thanks darlin.
YUMMMM that looks delicious and easy. I make the SUPER EASY slacker pot pie too, with cream of chicken, frozen veggies, and bisquick....I'm sure yours was FAR better. My only question...did Scott actually eat it because I did see some green in it? ;)
Of course you had a food post the day I choose to fast...curse you melting butter in a frying pan!!
Hi! I wandered over here from Talia's post about your pot pie!! YUM! That looks soo good, and it's probably my husband's favorite food too. I'll definitely have to try it. I have to say that MY version is MUCH lazier and not nearly as good since I just dump frozen veggies and cream of chicken soup over canned biscuits. Haha. Thanks for the recipe!!!!!!!
Okay, here is something hilarious:
I made this exact recipe on Tuesday as well. And I called Heather to ask her a question about the recipe and she was making it too. We thought that was funny considering I've had the recipe for 6 months and had never made it till then. But all three of us - on the same day....It must have been a chicken pot pie kind of day!
I did not get the memo to bake it with tinfoil and my crust did not come out looking so golden-licious as yours. Now I know the trick!
Oh, and adding vegetables?? I think not. I took away vegetables and added chicken and I do think it was the very best chicken pot pie I've ever had, if I do say so myself.
:)
i want to roll in this!
That looks SO yummy. I will definitely have to try it, especially since it's so easy!
I came through Talia's blog about your recipe (okay, confession, I've actually stalked your blog for a while now and just haven't commented because I'm "shy" :S ) and this looks really good! Dang this 100+ degree weather and my lack of AC (we do have a swamp cooler though!) so I will save this recipe for a winter treat when I will not melt from turning on my oven. My poor family, we've been subsisting on tortilla wraps and anything my husband can barbecue. This pot pie looks yummy! I love the pictures of your little boy crying because I now know I'm not the only one who shoos away the kids while I'm cooking! ;)
Lorie, I made this on Sunday, cooked it on Monday and we ate it for two days! #1) I LOVED that it lasted 2 days and #2) both my husband AND son loved it! I think I finally discovered a way to hide the vegetables so Braden will actually eat them! Thank you. :)
i never came across another blog with tasty tuesdays besides mine and my friends blog!!
Ok so I FINALLY got brave enough to attempt this last night!!! It turned out mostly fabulous. 1) I think I had enough filling for 2 pies though so the crust top was a little wonky. not a big deal tho
2) did you add any spices? I didn't and ended up adding salt & pepper to my own serving but I'm thinking it needs more than that.
3) Did you cook the potatoes before hand? Cause I didn't LOL and they were hard! :(
Miss Sarah Marie P sent me over here when I asked her about a pot pie I remembered her making & I am SO excited to make it this week!!
Omg, look how small Henry was! Eeep :D
Xoxo
